Navarro Restaurant, a staple of Valencian cuisine, has a rich history deeply rooted in family tradition. The Bayarri family has been dedicated to the culinary arts since the days of Vicente Bayarri (the grandfather of the current owners), who ran a small eatery with rooms in the Plaza de San Juan, near the central market before the Spanish Civil War. This legacy of hospitality continued through the generations, with each family member playing a pivotal role in the restaurant’s evolution.
The Journey of Navarro
In 1951, Vicente Bayarri established the restaurant, with the assistance of his friend Ramón Navarro and his sons, Julio and Jose Bayarri, transforming it into a beloved local institution. They personally sourced fresh ingredients from Valencia’s central markets, ensuring that only the finest products reached their kitchen. This commitment to quality and the personal touch became a hallmark of Navarro.
In the sixties (around 1960), as Vicente Bayarri retired from the business, leaving it in charge of his sons Julio and Jose Bayarri. By 1991, as Jose Bayarri retired, Guillermina Bayarri’s father, Julio, took over the business.
Guillermina, who had honed her skills in London, joined the family venture in 1991. She was soon joined by her sisters Ingrid and Cristina, and their cousin Antonio, who became the head chef. Together, they brought fresh energy and innovation to the restaurant, all while preserving its cherished traditions.
Authentic and Homemade Delicacies
At Navarro, everything is homemade, from their renowned cakes to every dish on the menu. A standout feature of Navarro’s offering is the special made-to-order paellas, including the traditional Valencian paella with chicken, rabbit, and snails, arroz a banda (fish rice), and seafood fideuà. The menu also includes unique dishes such as Prime Spanish cured ham (Bellota Guijuelo), croquettes served with vegetable tempura, and black pudding and apple crisp on ratatouille sauce. Local delicacies like fried baby squid in squid ink and a variety of seafood dishes highlight the freshest ingredients from Valencia’s markets.
